Pumpkin Muffins


Pumpkin Muffins


INGREDIENTS:

2 1/2 cups all-purpose flour
2 cups sugar
1 t pumpkin pie spice
1 t baking soda
1/2 t salt
2 eggs
1 cup canned or cooked pumpkin
1/2 cup vegetable oil
2 cups finely chopped peeled apples

STREUSEL:
1/4 cup sugar
2 T all-purpose flour
1/2 t ground cinnamon
4 t cold butter or margarine


DIRECTIONS
In a bowl, combine the first five ingredients. In another bowl, combine the eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in apples. Fill paper-lined muffin cups two-thirds full. In a small bowl, combine sugar, flour and cinnamon. Cut in butter until crumbly. Sprinkle over batter.
Bake at 350 degrees for 35-40 minutes or until golden brown. Cool for 5 minutes before removing from pans to wire racks.

Pumpkin Chocolate Chip Muffins




Every Year I make pumpkin Muffins, bread, cookies. I never keep the same recipe, they all seem to be about the same. This year I took a recipe off the internet and I took them to a baptism this morning. I think anything tastes good with milk chocolate chips in it!

3/4 cup sugar
1/4 cup oil
-MIX

2 eggs
ADD and MIX

3/4 cup canned pumpkin
1/4 cup water
ADD and MIX

Mix dry ingredients and then add to wet mixture

1 1/2 cup flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. cloves
1/2 tsp. cinnamon
1/4 tsp. nutmeg

Fold in
1/2 cup milk chocolate chips

Fill lined muffin pan and bake at 400 degrees 20-25 min.

Makes about 1 & 1/2 dozen

Spice Applesauce Bread















not the best picture, but oh well they tasted yummy

My mom used to make this bread when I was growing up.  It has been along time since I have made it.  Tonight I decided to make muffins instead of bread.

2 1/2 cups applesauce
2 cups sugar
1 cup oil
4 eggs
4 tbsp milk

Blend

Sift dry ingredients
4 cups flour
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp allspice
1 tsp cinnamon
2 tsp soda
1 tsp baking powder

Add to applesauce mixture
Beat well
Put in either bread pans or muffin tins
Sprinkle with mixture of:
1/2 cup pecans (I always leave these out because I am not a nutty girl)
1/2 cup brown sugar
1 tsp cinnamon
Bake at 350 until toothpick comes out clean
