From our "Joy in the Journey" Christmas Dinner.
Vegetarian Chili
1 diced green bell pepper
1 diced onion
1 carrot, peeled and diced
3 gloves garlic, minced
1 can diced green chiles
1 can kidney beans
1 can chilil beans
1 can whole kernal corn
2 cans diced tomatoes
1 TBSP chili powder
1 tsp ground cumin
I put all the ingredients in a crock pot on low for about 6 hours. Could also go in a pot on the stove and simmer until veggies are tender. Serve with grated cheese and sour cream.
